Camaron rebosado is a Filipino dish of battered, pan-fried

 shrimp that have usually been marinated in lemon juice.

This dish is similar to shrimp tempura, but the batter

 is somewhat more dense and thicker than tempura

 batter. Camaron rebosado usually comes served

 with sweet and sour sauce.


 

 

The word camaron means shrimp, and rebosado

 means overflowing or overflowed, making this

 dish overflowed shrimp

 The batter used for camaron rebosado

 is usually a

mix of flour, cornstarch, and salt with milk and eggs.

 


  

 

 Some cooks stir the mix sparingly, leaving a few tiny

 lumps in the mix, which affects the texture of the

 batter. The batter is intentionally made with a mild,

 borderline bland flavor to create a crunchy

 background for the flavorful sauce.

 

 

 


Camaron rebosado is generally made with large

 shrimp. To prepare them for this dish, the shrimp

 are cleaned and deveined, but the tail is left on

 the shrimp. Removing the vein in the belly of the

 shrimp is a vital step because the material inside

 it can make the shrimp unpleasantly sandy and

gritty when eaten. This recipe can also be made with prawns.

 

 

 

 

 

Camaron Rebosado is a Filipino Traditional dish. I

 saw a food blog before and it said that this dish

 can be called Overflowed Shrimp in English. This

 dish is a Filipino conterpart of the very famous

shrimp dish tempura of the Japanese because they

 have the similar way how to cook it. Batter and

shrimp are the key ingredients for this dish and

 making the batter depends on how you want to make it.

  

 

 

 

 

 

Do you want to make it simple, or spicy? Well if you

 want some adjustment, you can do it with the sauce

 because this dish requires sauce for better taste.

 You may use Banana catsup, the all-purpose

 sauce or you can even use soy sauce with

 spices. I am going to share with you my simple

Pinoy Camaron Rebosado Recipe
Pinoy Camaron Rebosado recipeServes/Makes: 3 - 4

 

 


Ingredients:

3/4 pound large shrimps (prawns), peeled and black vein cleaned out but tail in tacked
2 teaspoons calamasi (lime) juice
Salt and pepper to taste
Sweet and Sour Sauce (see the recipe below)
Batter:
2 eggs
3 tablespoons corn flour
3 tablespoons plain flour
Salt and pepper to taste
How to cook Pinoy Camaron Rebosado:
Marinate shrimps in salt, pepper and calamansi juice. Set aside.
Mix all batter ingredients until smooth.
Dip shrimps in this dough and drop one by one in boiling oil.
If you want doublesize shrimps, after cooking halfway, dip again in dough (hold shrimps by the tail while dipping) and fry until golden and crispy.
Serve with Sweet and Sour Sauce or soy sauce with calamansi juice.
Sweet and Sour Sauce Recipe
Sweet and Sour Sauce Ingredients:
2 cups pineapple juice
2 teaspoon sugar
3 tablespoons banana catchup
2 teaspoons hot sauce
1/2 teaspoon salt
3 teaspoons cornstarch diluted in 1 tablespoon of water
How to cook Sweet and Sour Sauce:
In a sauce pot, mix pineapple juice, sugar, catsup, hot sauce and salt.
Bring to a boil and add cornstarch mixture, thicken.
