PATATAS BRAVAS

 

 

Patatas bravas is a staple tapas dish which consists of fried potato wedges

 served with a spicy (hence the name) tomato based dip.

The name literally means fierce potatoes.

  

                                            

It is also sometimes served with a mayonnaise type dip similar to a seafood dressing

but spiked with paprika and cayenne.

 

You can chose to roast the patatas bravas because roasting intensifies the natural taste of potatoes.

This would be very nice as part of a tapas spread or as a side dish.

  

PREPARATIONS:

 

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 4 servings

 

 

Ingredients
750g new potatoes (Jersey Royals, if you can get them)
1 tbsp olive oil
1 onion
200g cooking chorizo (sausages, not pre-sliced)
300g salad tomatoes
1 green chilli, deseeded and finely chopped
1tsp hot smoked paprika
Squeeze of lemon juice

 

Method

                                                    
1. Wash the potatoes (no need to peel) and then halve them, or third them if they are larger.
Cook them in a large pan of boiling water for about 15 minutes, or until they are tender.
 
 
 
2. Finely slice the onion, and fry gently in 1tbsp of olive oil until they are softened.
  
                                         
 
3. Drain the potatoes, and then add them to the onions, along with the chorizo.
Cook for about 10 minutes until they start to brown.
  
        
 
4. Add the tomatoes, chilli, and paprika and give it a good stir.
Cook for about 5 minutes until the tomatoes start to break down.
 
 
 
5. Stir in a squeeze of lemon juice, and then serve with garlic mayonnaise.
